Brown Butter Cake

Brown the butter, strain through a fine mesh strainer and chill. Once butter is solidified, cream with sugar until light and fluffly. Slowly add eggs & yolks blending until smooth. Sift together dry ingredients. Add to sugar/butter mixture alternating with milk. Next, add the dry ingredients in 3 parts, alternating with the wet ingredients. *3 dry additions, 2 wet additions. Spread into parchment lined 1/4 sheet pan. Bake at , 300F convection 20-25 minutes.

Ingredients

  • 150 grams Unsalted Butter
  • 136 grams Granulated Sugar
  • 38 grams Light Brown Sugar
  • 66 grams Whole Eggs
  • 30 grams Egg Yolks
  • 170 grams All-Purpose Flour
  • 6 grams Baking Powder
  • 2 grams Salt
  • 1/4 tsp Ginger
  • 1/2 tsp Cinnamon
  • 160 grams Whole Milk

  • Sift together dry ingredients.
  • Next, add the dry ingredients in 3 parts, alternating with the wet ingredients, ending with the dry ingredients.
  • Spread into a parchment lined 1/4 sheet pan.
  • Bake at 300F convection for 20-25 minutes.
