  1. Pre-heat your oven to 350° F.
  2. Prepare your cake pans, by applying nonstick cooking spray or using pan goop. Place a parchmant paper on the bottom of the pan and spray or use goop as well.
  3. In a heavy sauce pan, stir together the sugar, salt, cocoa powder, and baking soda.
  4. In another sauce pan, bring the water to a rolling boil. Once it is boiling, slowly add the water to the cocoa powder mixture and stir birskly.
  5. Place the mixture back on the stove and bring to a boil. Once it starts to bubble, turn off the heat and let it stand for 10 minutes to cool.
  6. Once the mixture has cooled, place the mixture into a mixing bowl and add the canola oil and vanilla. Mix on low speed for 10 seconds.
  7. Add in the flour mixture and continue to mix on low speed.
  8. With minimal beating, add the eggs, egg yolks, and buttermilk to the batter. Do Not Over Mix!
  9. Pour the batter into the prepared baking pans and bake for 30 - 35 minutes.
  10. Bake the cake until it is done. Test by touching the top and it should be springy to the touch. You can also test for doneness by inserting a toothpick and if it comes out clean, it is done.
  11. All the cake to cool in the pan for about 10 minutes on a wrie rack. Run a knife around the egg to loosen it from the pan.
  12. Invert the cake and allow it to cool completly before icing it.
